RECIPE: Choc Berry Mousse



INGREDIENTS:

  • 300g good-quality dark chocolate, roughly chopped
  • 3 eggs
  • 1/4 cup (55g) of caster sugar
  • 1 tablespoon of good-quality cocoa powder, sifted
  • 300ml thickened cream, plus extra whipped cream to serve
  • Berries! We used strawberries all through the mousse, and raspberries on top

METHOD: 

Step 1: 
Place chocolate in a heatproof bowl over a pan of simmering water (without letting the bowl touch the water) and stir until it has melted. Remove bowl from the stove, and allow it to cool slightly

Step 2: 
Put eggs and sugar into a large mixing bowl, and beat together using electric beaters for 5 minutes (or until the mixture is pale, thick and doubled in volume).  Gently fold in the cooled chocolate and cocoa powder to create one mixture

Step 3:
In a seperate bowl, whip the cream until it has thickened. Using a large, metal spoon (precise, we know), carefully fold the cream into the chocolate mixture, making it as light and fluffy as possible. Fill serving glasses with berries (we used cut-up strawberries) and spoon mixture in layers. Refrigerate for 1 hour minimum. Remove glasses from the fridge 15 minutes before you wish to serve them. Top with more berries for added flavour and decoration! Voila!
